Conchiglie is a shell-shaped pasta made from durum wheat semolina, molded to resemble a ridged sea shell. Conchiglie comes in multiple sizes: conchigliette (very small, for soups), conchiglie (medium, for sauces), and conchigliette rigate (ridged variants). The concave interior of each piece faces upward when served, collecting sauce and solid ingredients. The name means “shells” in Italian.

This makes conchiglie fundamentally different from tube or ribbon shapes: instead of coating the pasta surface, the sauce sits inside it. Chunky vegetable ragus and minestrone-style preparations exploit this geometry. Smooth cream or oil sauces are wasted on conchiglie — the concave shape offers no advantage over flat surfaces with thin liquids. Large conchiglie (conchiglioni) are hollowed out and stuffed with ricotta or meat before baking.
